Kiwifruit Tart

Impress your friends and family with this delicious tart.



  • 2 cups flour
  • 1 cup pecan nuts
  • 4 tablespoons castor sugar
  • 125g butter or margarine
  • 2 tablespoons water


  • 50g ricotta or cottage cheese
  • 1/2 cup castor sugar
  • 1/4 cup chopped blanched almonds
  • 3 tablespoons sherry or port
  • 3 large eggs
  • 1 teaspoon grated lemon rind
  • 2 kiwifruit


  1. Combine flour, nuts, sugar and butter together in food processor, adding sufficient water to make a soft manageable dough. Cover with GLAD Wrap and refrigerate for at least 1 hour.
  2. Roll out pastry and cut to fit large tart tin or small individual tart tins. Place on MONO Baking Paper and refrigerate covered with GLAD Wrap until required.
  3. Beat ricotta, sugar, almonds, sherry and eggs together. Stir in lemon rind and divide mixture evenly between pastry cases.
  4. Bake at 180 degrees C for 10-12 minutes or until cooked. Allow to cool.
  5. Decorate each tart with slice of kiwifruit just before serving.
  6. Note: For decoration, use strawberries or other fruit in season.
