Chicken, Cheese & Herb Schnitzels

Just the right tasty balance of herbs and cheese make this chicken schnitzel a great idea for a week night dinner for the family.

  • 1 cup breadcrumbs
  • 1 cup grated cheddar cheese
  • 1 1/2 tsp mixed dried Italian herbs (i.e. tarragon, oregano, thyme)
  • 4 chicken fillets
  • 2 eggs
  • 1 tbsp milk
  • 1 cup plain flour
  • 3 tbsp olive oil


  1. In a medium bowl, combine breadcrumbs, grated cheese and mixed herbs. In another bowl place the flour, and in the third bowl whisk the eggs and milk together
  2. Place each chicken fillet in a GLAD Zip Slide Bag, press out the air and seal. Using a meat mallet or rolling pin, bash gently to tenderize the fillet until it is 1 – 1 ½ cms thick. Do not bash too hard or the chicken will tear.
  3. Dip the chicken fillet into the bowl with flour, and shake off any excess. Then dip into the bowl with egg mixture, again making sure the chicken is covered and finally place it into the bowl with breadcrumbs and cheese and make sure the fillet is completely covered. Place on a plate and repeat with remaining fillets
  4. Heat oil in a large fry pan over a medium heat and place each fillet in the pan. Cook for 3-4 minutes on each side until golden brown and cooked through.
