A classic Kiwi recipe! If desired, the addition of dried apricots puts a new spin on an old favourite.
1 cup flour
1/2 cup sugar
1 1/2 cups thread coconut
1 1/2 cups rolled oats
1/4 cup chopped walnuts or dried apricots
2 Tbsp Golden Syrup
1 tsp baking soda
2 Tbsp boiling water
Preheat oven to 160°C.
Mix flour, sugar, coconut, rolled oats and walnuts or apricots in a large bowl.
Melt butter and golden syrup together.
Mix baking soda with boiling water until baking soda is dissolved.
Mix both butter and baking soda mixtures together in a large bowl. Add flour mixture and combine. If the combined mixture looks too dry, add some more golden syrup, or if it looks too wet, add some more coconut or rolled oats.
Roll mixture into small balls (about a teaspoonful) and place on a greased baking tray lined with MONO Baking Paper.
Press balls flat with the back of a fork. Remember to allow room for biscuits to spread.
Bake for 25 – 30 minutes. Once cooked, cool on a wire rack and store in a GLADWARE container.
