My appointment was at 4pm at the George Hotel to meet Paul and Caroline Jeffrey’s authors of “Diary of a Fat Man” and Fat Man Cooks. I didn’t really know what to expect except what the media had already told me, at 40 years old he was grossly obese and that if he didn’t lose weight he would die; Paul lost 64kgs in 12 months! As I waited in the foyer I couldn’t stop myself from fidgeting, not because I was interviewing a famous author (although is book is internationally renown) but more because I have never actually interviewed anybody before, and then had to right an article about the interview.

After 5 minutes of nervous waiting, the elevator door opened and I was introduced to what I would like to say is one of the most pleasant and charming couples that I have ever met, Paul and Caroline Jeffery’s.
The purpose of Paul and Caroline’s book is to remove the fallacy that to eat healthy has to be hard, boring and expensive. This book is not a fad diet. Paul and Caroline do not believe in diets, this book encourages a lifestyle change for the better. There are 90 healthy yet inexpensive recipes in the Fat Man Cooks and each and every one of them have had the personal touch of Paul and Caroline, including the Chickpea Curry one of Paul’s favourite meals.
It was shocked to learn that there is actually nothing wrong with eating, it is even ok to eat large servings, the trick is in what you eat. For example when eating out, would you pick a steak and chips or a steak and salad? Sometimes the decisions aren’t always this easy but normally the answer is also not that hard. The trick is to always remember the higher the GI (glycaemic Index) the better.
Eating healthy does not have to be expensive. Paul and Caroline include at the bottom of every recipe the price of the ingredients needed to cook the meal based on a family of four. The first 4 recipes that I looked at were only $10 each, that’s $2.50 per person! As Paul told me, “I prefer not to eat out; I can cook healthier, cheaper and better tasting meals at home”, and looking through their book I totally believe them.
No lifestyle change is complete without exercise, and the best exercise that Paul and Caroline recommend is the rowing machine, as it works every muscle in the bod
